Looking for a quick meal to feed the family? Try these great corn fritters.
- 3 cups corn kernels (fresh, frozen or canned)
- 1 capsicum, diced
- 4 eggs
- 1/2 cup flour
- 1 teaspoon baking powder
- 3 tablespoons oil
- Mix together the corn kernels, capsicum, eggs, flour and baking powder.
- Heat the oil in a large frying pan.
- Spoon mixture into the pan to form fritters (about two tablespoons per fritter).
- Cook the fritters in batches until browned on each side.
